2023 Pét tanNat

Our Pét tanNat is a distinctive pét-nat crafted from our Estate Tannat. This naturally bottle-fermented sparkling wine is made in the ultra-brut style — the driest of the dry.

Tannat is a rare grape variety that has found a home at Troon Vineyard. Native to the Madiran region of Southwest France, it has become quite popular in Uruguay. This high acid and tannin variety is quite versatile in the Applegate Valley, and we make both this sparkling wine and a deep and structured red wine from it.

The grapes for the 2023 Pét tanNat were harvested on September 25, 2023. Our tannat for this sparkling wine receives a very gentle pressing with minimal press rotations to minimize color and tannin extraction, making this wine a blanc de noirs (white wine from “black” (red) grapes - usually pinot noir for sparkling wines). The juice was settled in a stainless steel tank for 24 hours before being racked to a separate stainless steel tank for fermentation. Like all Troon Vineyard wines, the fermentation started spontaneously from indigenous yeasts with no additives. 

We monitor this primary fermentation very closely, as this wine gets bottled near the end of fermentation at a sugar level of 12-16 g/L. This process is known as the Ancestral Methode, where the remaining sugar ferments inside the bottle, naturally carbonating it, creating a wine sometimes known as a “pétillant naturel” or pét nat. Once bottled, the wine lies en tirage for nine months to a year before being hand disgorged to remove sediment and tartrates, crown capped, and labeled.
